Breakfast for Dinner

My husband could eat breakfast for dinner every night.  Don't get me wrong I love it, but it's not something I want for dinner all the time. Although I will have it every night if I have two helpers like I did on Saturday night cooking in the kitchen with me! Ken made the eggs and sausage, Molly Cate helped me with the apple and cream cheese filled cinnamon pockets.  Caroline....well...she made sure Diego was behaving in the living room! The apple and cream cheese cinnamon pockets were the yummiest...here is what we did....

Gathered our ingredients:
1 loaf of bread (we made 8 pockets...so we needed 16 slices of bread, you could easily make about 12 pockets with this recipe...we just overstuffed ours)
1 Golden Delicious Apple (although I would use 2 next time)
8 oz. Cream Cheese
1/4 teaspoon of cinnamon (divided)
1/4 cup powdered sugar
Molly Cate cut out the circles with a 3" round cookie cutter while I made the filling.  Having a little helper do this really saved me a lot of time!

I made the filling by: peeling and dicing the apple, adding the softened cream cheese, 1/8 t. of cinnamon and 1/4 C. of powdered sugar

The filling was so good we had to clean the bowl!!

We put a (heaping) tablespoon of the filling on top on the bread circles, which are on a greased cookie sheet.

We put bread circles on top of the filling to make a little sandwich, then pinched the edges down using a fork.

Before putting them in the oven we brushed them with the melted butter and a mixture of the sugar and 1/8 teaspoon of the cinnamon. Next pop them in a 400 degree oven for 10 minutes or until toasty.


YUM!! Crunchy, warm, cream cheese apple goodness!!

Tonight everyone loved breakfast for dinner! It might be the pregnancy, but I think I could eat these yummy things everyday!
